Breakfast:
Fruit is a good option for breakfast as long as there is no cross contamination.
Bagels – Glutino Plain Bagels are Rachel’s favorite. She eats them with cream cheese, butter, or jelly. Please have containers set aside so these condiments can remain Gluten free.
Pancakes and Waffles – Pamela’s Products Baking and Pancake Mix is fantastic. I am sending one package with Rachel to camp, but you will probably need more. You can add chocolate chips or berries to the batter. Also, these pancakes freeze and reheat well.
Eggs – Rachel can eat eggs as long as the grill or pan is Gluten free, but she doesn’t love eggs or eat them very often.
Cold Cereal – There are a lot of Gluten free cereals, but Rachel isn’t really crazy about most of them. Chocolate Lucky Charms and Fruity Pebbles are two cereals she enjoys and both are Gluten Free.
Hot Cereal – Most hot cereals contain Gluten. McCain’s makes several Gluten free oatmeals, but Rachel doesn’t eat much hot cereal.
Cinnamon Rolls – Chebe Mix for Cinnamon Roll-Ups is a great product that makes delicious Cinnamon Rolls.
Donuts – Kinnikinnick Chocolate Dipped Donuts are a good frozen donut
Muffins – Dietary Specialties Blueberry Muffin Mix is very good
Lunch and Dinner:
Bread – EnerG Tapioca Loaf is our preferred Sandwich Bread. Most lunch meats and cheeses are Gluten free, just check the ingredients. Rachel usually puts a little mayonnaise on her sandwiches. Again, the container will need to be set aside as Gluten free.
Pasta – Tinkyada makes a lot of great Gluten free pasta. Our favorite is Brown Rice Penne, but they have lots of shapes. Quinoa also makes some good pastas. Our favorite shape of theirs is the spaghetti. Gluten free pasta does not freeze or reheat well and gets mushy if prepared too far in advance. Amy’s Gluten Free Rice Pasta Rice Mac & Cheese is a wonderful single serving frozen macaroni and cheese dish. Or, Annie’s Rice Pasta & Cheddar Macaroni & Cheese makes a pretty good macaroni and cheese, but the box instructions make a very watery cheese sauce. We use more butter and less milk to create a thicker sauce.
Pizza – Amy’s Cheese Pizza Rice Crust is a great frozen pizza that we like. Additional toppings can be added.
Proteins – Meat, Fish, and Beans are all Gluten free, you just have to check for sauces, marinades, or coatings that contain Gluten.
Glatt Kosher S’Better Farms has great Chicken Fingers and Corn Dogs that are Gluten Free.
For any Asian meals, you’ll need to use a Gluten free soy sauce. There are several available, but we prefer San-J Organic Tamari Wheat Free Soy Sauce.
Mexican and Spanish dishes can be made Gluten Free by using Corn Tortillas and Corn Tortilla Chips and by checking that the seasonings are gluten free. McCormick Mexican Seasoning is Gluten free. We use the Mild Flavor.
Dr. Praeger’s Potato Crusted Fish Sticks are really good.
Salads and Vegetables – Rachel loves salads and vegetables. She eats a wide variety and they usually make up the bulk of her meal. They are Gluten free unless they have been cross contaminated. Most salad dressings are Gluten free, just check the ingredients.
Starches – Potatoes, Rice, and Corn are all Gluten free. Just check for cross contamination, sauces, and seasonings.
Rolls and Breads – Chebe Bread makes an amazing cheese roll mix. It’s fantastic.
Desserts and Baking:
All Purpose Flour - Bob’s Red Mill All Purpose GF Baking Flour is really good and can be substituted one for one in recipes that don’t call for a lot of flour.
Flour – There are lots of good flours that can be used, rice, potato, brown rice, etc. EnerG makes a lot of good flours. We use the rice flour for most cooking and the potato flour for making think soups or sauces.
Brownies – Pamela’s Products Chocolate Brownie Mix is very good
Chocolate Chip Cookies – Gluten-Free Pantry Chocolate Chip Cookie and Cake Mix is very good.
Cake Mix – Cherrybrook Kitchen Chocolate Cake Mix is very good. Pamela’s Classic Vanilla Cake Mix is also really good.
Sugar Cookies – Cause You’re Special Classic Sugar Cookie Mix is very good
Frosting and Icing – Many are Gluten Free, just check the ingredients.
Vanilla Extract – Pure Vanilla Extract is usually Gluten Free, but imitation often has gluten in it. As will everything else, please check the ingredients of baking supplies.
Ice Cream and Frozen Treats – Many ice creams and frozen treats are Gluten free. Just check ingredients. Barkat Waffle Cones are really good if you do ice cream in cones.
S’mores – Marshmallows and Chocolate are fine, but Rachel will need Gluten free graham crackers. Jo-Sef Graham Crackers are really good.
Snacks and Other Foods:
Pretzels – Glutino Gluten Free Pretzels are really good. They make sticks and traditional twisted shape too.
Crackers – Glutino Gluten Free Crackers are a good cracker that sort of looks like a Ritz. Edward and Sons Brown Rice Snaps Unsalted Sesame is another good cracker.
Chips – Many chips are Gluten free. Doritos, Pringles, and Sun Chips are not. Just check the ingredients of other kinds of chips
Candy – Many candies are Gluten free. Licorice is not safe, it’s made with wheat. Just check the ingredients of candies.
